Acaçá de Rice, a true gem of our Brazilian gastronomy, was nearly forgotten in the old recipe books of our grandmothers. Ideal to accompany fish and seafood stews, such as Vatapá.

Acaçá de Rice

Ingredients:

  • 1 liter of water
  • 1 jar of coconut milk
  • 4 tablespoons (soup) of rice cream or rice flour (or cornstarch)
  • 1 teaspoon of salt

Preparation:

  1. Boil three cups of water with coconut milk and salt.
  2. Meanwhile, dissolve the rice cream in the remaining cup of water.
  3. When the first mixture boils, gradually pour the water and rice cream mixture, stirring constantly with a wooden spoon to avoid lumps and ensure thorough cooking.
  4. Pour into large molds for individual servings or in a larger dish, serving with Vatapá on the side.

Some Bahians may perfectly do without this accompaniment, but at home, my Cariocas find it indispensable, and so do I!
